Carne mechada, mom's food.

My favorite food is the carne mechada, any accompaniment goes well beside it. I remember that when I was a child my mom cooked it for special occasions, for example, my birthday or the celebration of some festive day, maybe this is one of the reasons why it became my favorite food.

I like this food so much that when I just grew up and I was ready to approach the kitchen, I learned to cook it. Now, every time I have time I cook 'carne mechada', is almost always weekends.

My mom taught me how to cook and I think that one of the hardest things to learn was the meat. I remember that many times I forgot I was cooking. You have to wait a long time to get the meat out of the pot, then when I remembered, it was already burned hahaha.

The special thing about the carne mechada is that it has a very soft texture and inside it carries carrot sticks, then when you chew you feel a soft and crunchy mix, that gives a touch.

To be able to cook the meat you have to put it in a pressure cooker for forty five minutes... it's a long time!, I know, but the final flavor ir worth it.
